Winemaking Whole bunch pressed and wild fermented and matured in a mix of stainless steel tank and old French oak. Wild malo-lactic fermentation (100%). Left on full lees with occasional stirring for 6 months. Bottled without fining or filtration. Flint, talc, river stone, jasmine and citrus. Pulpy, solids-y weight from whole bunch and dirty juice ferment. Even in these warmer years the granitic soils of the vineyard ensure a clean acid line and cool fruit characters.

A warmer, dryer year but probably the most elegant, fine wines we've made from a hot year. A very good growing season. Despite the hot summer our unique site and granite soils always provide good freshness and acidity.
